Located on the sun-drenched corner of Guldbergsgade, Mirabelle has long been a fixture of the neighbourhood, a restaurant equally at home with local regulars and international visitors. When redesigning the interior, Kristina Dam Studio set out to create a new customer flow that would allow Mirabelle to unfold across the day: a morning and lunch destination built around the ritual of sourdough bread baked directly on-site, and an evening restaurant defined by refined wines paired with the season's vegetables, alongside the cheeses and charcuterie made fresh in the kitchen upstairs. The ambition was not to erase the restaurant's history, but to preserve as much of its character as possible while lifting the overall expression into a more considered, cohesive whole, a careful restoration rather than a reinvention.
